Meatballs on a Budget

Meatballs, baked potato, and broccoli for dinner.

By far, the most popular dish in my house this week was meatballs.  My son was literally kissing the meatballs before he ate them because, as he said, “I love them so much!”  Can’t get a better endorsement than that!

Here’s the recipe.  (It does use all Whole Foods products because of our 30-Day Thrifty Challenge.)  Cheers!

Ingredients

  • 2 pounds of ground beef (we used 80/20)
  • one medium onion
  • 10 Ritz-style crackers
  • 14 ounces diced tomatoes
  • one egg
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons dried oregano

Directions

Place the ground beef in a mixing bowl.  Add the diced onion, crushed crackers, egg, salt, pepper, and oregano.  Mix thoroughly until all ingredients are evenly distributed.  Use the mixture to form the meatballs by hand; you should try and wind up with 16.

Add the olive oil to a large skillet.  Let it heat, then quickly add the meatballs.  Brown them in one area, then turn and brown on an adjacent area.  Keep turning the meatballs until thoroughly browned.

Add the diced tomatoes and cover, cooking for 5 to 8 minutes, checking for doneness.  Makes four generous servings.
$9.50 for the recipe / $2.38 per serving.

The meatballs pair well with broccoli, green salad, pasta, or rice. We are living on a frugal budget.  If you wanted to, you could also add flax seed, bell peppers, or any other spices that appeal to you.  Have fun and please let me know what you think of the meatballs as well as any variations you use!
